REN revives the shizuku-sake style that earned Katsuyama nine consecutive Gold Medals at the National New Sake Appraisal during the Showa era. At the time, Katsuyama referred to this sake as “Kake-shibori.”

In the Nanbu Toji Terui tradition, specially crafted silk bags were once used for pressing. Today, thanks to significant improvements in sake quality, Katsuyama returns to using traditional sake bags.

The moromi is placed into these hanging bags, and over many hours, the essence of the sake drips naturally ― drop by precious drop ― without any mechanical pressure. The result is a sake with a distinctive balance―floral yet powerful aromatics, harmonized with the umami of koji and fermentation, all supported by a dignified, structured body.
